What tip would you tell people to make their cooking more spectacular?

One time a dear friend of my mom (RIP mom and Madeline) mentioned to me that her secret for making her boxed mixes taste like homemade was to add 1 tsp. of vanilla extract. It does really make a difference, I think.
Also, Paula Dean says to add 1 tsp of instant coffee to brownie recipes and I do think that is yummy and gives a more intense flavor.
What tips do you have to offer?

Balsamic vinegar - even just a teaspoon into pretty much anything I'm cooking! Vegetables, meatloaf, mushroom-wine sauce, whatever. It just brightens everything up a little in a very subtle way.

I also have been known to sneak a teaspoon (or even less) of sugar into vegetables that I'm cooking. No one knows it, but they know that the squash or peas or corn or carrots taste really, really good ;-)
